It’s very flexible. You can use any combination of any of the following (or similar) vegetables:
winter squash, parsnips, sweet potatoes, carrots, potatoes
onions, kohlrabi, celery, cauliflower
cut green beans, garlic
Drizzle with a mixture of balsamic vinegar, oil and seasonings.
Toss with cooked, drained white and or pinto beans
Add sausage if desired. Mmmm.
