Taco Casserole

1 pound ground beef
8 ounces tomato sauce
1/3 cup chopped onion
1/3 cup water
taco seasoning of your choice

Brown and drain the beef, return to heat, stir in above ingredients.  Heat, stirring.  Meanwhile combine:
2 eggs
1 cup milk

Stir in a little of the tomato sauce mixture into the milk and eggs, stirring constantly until smooth.  Then pour eggs and milk into skillet, stirring continuously, adding:

2 cups cooked beans such as kidney or pinto, drained
1 1/2 cup grated monterey jack cheese
2 1/3 cups broken corn chips or tostada shells

Turn into a greased 12 X 7 1/2 X 2 inch baking dish, bake at 350 for half an hour.  Let stand ten minutes.  Then top with:

1 cup shredded lettuce
1 diced tomato
black olives
more jack cheese

Cut into squares.  Serves 6
