Quinoa and Potato Salad

Quinoa potato sald

2 pounds fingerling potatoes
1/4 cup rice vinegar or apple cider vinegar with 1/2 t. sugar
1/4 cup white wine
1T olive oil
2 T white miso
1 T dijon mustard
1/2 cup chopped shallots
2 cups cooked quinoa
3/4 cup chopped dill pickles
2 celery ribs, diced
1/4 cup minced fresh parsley
1/4 cup dill, fresh, minced
salt, pepper

Serve warm

Substitute onions or leeks for the shallots
Substitute sunchokes for the potatoes for a low carb version
