Menu Plan Monday, week of April 1st

I’m still putting these in order.  Keep checking back.  The focus this week is on low-carb, and on eating out of the pantry and freezer.  My freezer happens to contain the remains of two cows we raised for meat. We’ve been eating them a long time.=)

Breakfasts

Microwave Shirred eggs, with an artichoke heart or two

Egg Casserole in Muffin Cups

Green Monster Muffins for the carb eaters

Side dishes to start

Fermented beets 

Pumpkin ‘muffins’ can substitute cooked and mashed winter squash, carrots, sweet potatoes for the pumpkin.

Lunches

Leftover biscuits, with shaved ham and cheese, serve with oranges and spinach or lettuce

Ground Beef and Pumpkin, , leftover biscuits for the carb eaters, turnip slaw

Cheeseburger Skillet with chips for the carb eaters, pork rinds for the low-carbers, and a green salad.- Mmm, Pip made this for Monday’s lunch. She reduced the meat but left the other ingredients the same. It is like a cheeseburger in a bowl, just no carbs (or not many) because no bun!  It’s yummy.

bacon strips between two pieces of romaine lettuce (a surprisingly tasty sandwich) for the low carber. Mix leftover ugly burger meat with sauerkraut, reheat and top with some swiss cheese. Serve with fruit (fresh, frozen, whatever is on sale or on hand)

reheated Meatloaf ‘muffin, celery sticks, baby lettuce salad

cheese ‘crackers’  in artichoke heart dressing. for the low-carbers, leftovers for the carb-eaters.

Low-carb pizza for me, English muffin pizzas for them.

Suppers

Green Enchilada Bake with chips for them, pork rinds for me, green salad

Hamburger Broccoli Alfredo casserole with garlic bread for them, salad for all.

Crockpot Chili , with bok choy, celery, and or carrot sticks. Crackers for them.

Mini Meatloaves, Cauliflower ‘popcorn’, babygreens salad with blue cheese dressing

unstuffed cabbage Roasted radishes for me, roasted potatoes for them.

Crustless Quiche Lorraine, salad, fruit

Leftover buffet

Snacks choosing from:
celery sticks
leftover Pumpkin muffins
cup of beef broth
Coconut Manna

flax seed ‘cookie’
pickles
olives
seaweed
tofu

Beverages:
apple cinnamon tea and other herbal teas
Water, splash of lemon juice and a few drops of apricot stevia
coffee sweetened with coconut milk, stevia, and cinnamon
