Fan Cut Potatoes

Scrub your potatoes. Put a spoon down on the cutting board immediately behind the potato and hold it there. Slice each potato as you would a loaf of bread, except you do not go all the way down through the potato. That’s why the spoon is there- to keep you from cutting the potato apart into slices as for potatoes anna. We’re not making potatoes anna, we’re making fan-cut potatoes.

Bend the potato a little bit to open up the fanned slices. Put the potato in a baking pan and do the next one in the same fashion. You’ll want at least one potato for each person (or for two small people).

Melt some butter (we use 1/2 cup for nine of us), add herbs such as parsley, chives, thyme, garlic, onion powder, rosemary- whatever sounds good to you. Gently pour the melted butter and herbs over the potatoes.

Bake them in the oven at 400 for about 45 minutes (depends on your oven). Serve alongside a salad and a meat dish (if you eat meat). These look prettier the thinner you slice them and the more you fan them out, and you should serve them to your most elegant guests without apology. Garnish with green onions if desired.
